I had these last night at my friend, Laurel's, house. They were so good I helped myself to a couple and then I had to ask her for the recipe(thanks Laurel!). I can't wait to make them myself. They are seriously to die for!
1 1/2 c. sugar
1 1/2 c. softened butter
1 tsp. salt
2 tsp. vanilla
4 c. flour
2 eggs
1 (18 oz.) jar raspberry jam
1 c. white chocolate chips
Preheat oven to 350*. Combine sugar, butter, salt, and vanilla in a large mixing bowl. Beat at medium for 1-2 minutes. Add flour one cut at a time; mix on low. Mixture will be crumbly. Set 1 cup aside. Add eggs to the remaining mixture in bowl. Beat until dough forms(about 1-2 min). Press into 9X13 pan and bake for 30 minutes. Remove from oven and spread with raspberry jam. Sprinkle white chocolate chips over jam. Top with remaining crumb mixture. Bake 20-25 more minutes or until lightly browned. Cool completely and cut into bars. Enjoy!
