Fall Chex Mix


3 cups Chex
2 cups Golden Grams
1 cup pretzels
Mix all together in a bowl

In saucepan add 3/4 cup butter, 1 cup sugar, and 1 cup light corn syrup.
Mix on stove until comes to a boil.  Pour over mixture and mix lightly.  Pour on wax paper till it cools.  Then add candy corn!

Blueberry oatmeal muffins


2 cups flour
1 cup oats–quick or regular oats
2/3 cup sugar
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups honey greek yogurt (Chobani)
2 large eggs, lightly beaten
4 tablespoons unsalted butter, melted and slightly cooled
1 teaspoon vanilla extract
1 cup fresh blueberries

Heat oven to 350°. Coat muffin tin with cooking spray
or liners. Combine flour, sugar, oats, baking powder,
baking soda and salt in a bowl. Combine yogurt, eggs,
butter, and vanilla in a second bowl. Fold yogurt
mixture into dry mixture; stir to combine completely.
Gently fold in blueberries. Spoon into muffin tins.
Bake for 20-25 minutes.  My family likes the
mini muffins so I just bake them for half the time
12 -15 minutes.

3 ingredient chocolate muffins

 
1 box of chocolate cake mix
1 small can of pumpkin puree 15 ounce
6 ounces of chocolate chips
 
Mix cake mix and pumpkin together.  Add
chocolate chips.  Pour in muffin tin with liners.
Bake at 350 for 22-25 min. I made mini cupcakes
and only baked them for 12 to 15 minutes.

Pepperoni Roll Ups


We made these for dinner tonight(I doubled the recipe for my big family and served with a green salad). Not only are they super tasty, they are super easy! Your kids can help you roll them up and they are ready in less than 15 minutes! This is the perfect kid-friendly weeknight meal.

1 tube (8 ounces) refrigerated Pillsbury crescent rolls

32 slices pepperoni

4 pieces string cheese, cut in half

1/4 teaspoon italian seasoning

1 Tablespoon butter, melted

Marinara or Pizza sauce, for dipping


DIRECTIONS: Preheat oven to 375 degrees. Unroll crescent dough; seperate into 8 triangles. Place 4 pepperoni slices on the large end of each triangle. Place one half string cheese on the top of the pepperonis. Roll up towards point. Place roll ups at least 2 inches apart on a lightly greased cookie sheet.


Mix together italian seasoning and melted butter. Brush over the tops of the roll ups. Bake for 10-12 minutes or until golden brown.

on a sheet pan lined with parchment or wax paper and freeze.
Now you have a healthy Valentines snack!!

No Bake Energy Bites


1 cup oatmeal
1/2 cup peanut butter
1/3 cup honey
1 cup coconut flakes
1/2 cup ground flax seed
1/2 cup milk chocolate chips
1 tsp vanilla

Mix everything above in a medium bowl until thoroughly
incorporated. Let chill in the refrigerator for half an hour.
Once chilled, roll into balls and enjoy! Store in an airtight
container and keep refrigerated for up to 1 week.

A great way to sneak a healthy snack into your Halloween festivities.  Just take a sharpie to an orange,  clementine, tangerine, or mandarin and create your Jack o lantern face.  I know my boys would love finding one of these in their lunch box's.  :)

Baked Mozzearella Bites


1/3 cup panko (Japanese breadcrumbs)
3 sticks mozzarella string cheese
1 egg beaten
Marinara sauce

Heat oven to 425.  Cut mozzarella sticks into 1 inch pieces.
Working with one piece at a time, dip cheese in egg and then
dip in panko breadcrumbs.  Place cheese on a baking sheet coated
with cooking spray.  Bake at 425 for 3 minutes or until cheese is
softened and thoroughly heated.  Pour marina sauce into a
microwave safe bowl.  Microwave for about 1 minuted until
heated.  Serve with mozzarella pieces.

Root beer float Popsicles

Recipe from Smile Monsters

1 1/2 cups of Root beer
1/2 cup sweetened condensed milk

Mix root beer and sweetened condensed milk
together with a whisk. If it gets to foamy set
it in the fridge for a bit to settle down.
Pour into Popsicle molds. Freeze for a
couple of hours.

Carrot Oven Fries



1 lb. carrots (about 5 or 6 large,peeled and cut into 4"x1" sticks.)

1 tsp. Olive oil

1 tsp. cornstarch

1 packet Ranch dressing & seasoning mix

Pam vegetable cooking spray




Preheat oven to 400* and in a large bowl,combine carrots with oil, cornstarch and the ranch dressing packet. Toss all until well coated. Spray a cookie sheet with cooking spray. Now arrange coated carrots in a single layer on pan. Bake for 25-30 minutes or until crispy.

Crescent pizza snacks


8 oz. tube refrigerated crescent rolls
14 oz. jar pizza sauce/or tomato sauce
3/4 c. pepperoni
1 c. shredded mozzarella cheese

Unroll crescent rolls into individual triangles on
an ungreased baking sheet. Spread a layer of pizza
sauce over dough and top with pepperoni and cheese.
Roll into crescent shape. Bake at 375 degrees for
18-20 minutes or until rolls are golden and cheese
is bubbling. Makes 8 rolls.

Stuffed pizza rolls

My family loves these pizza rolls. My oldest boy tells
me I'm the best cook when I make these. :)
1 roll refrigerated pizza dough (or make your own)
marinara/pizza sauce
2 T grated Parmesan cheese
1 T olive oil or melted butter
1/2 t garlic powder
1 t dried Italian seasoning
mozzarella cheese
Pizza toppings of your choice: ham and pineapple,
pepperoni slices, sausage, etc.

Preheat oven to heat specified on pizza dough package.
About 400 degrees.
Unroll your pizza dough onto a lightly floured surface.
Pat or roll the dough so it's about 12" by 8". You're
going to want to cut it into about 24 squares.
Use a pizza cutter to slice the dough into 24 squares
Place cheese and desired topping on each square.
When your dough squares have cheese and toppings
on them, carefully lift up each square and
wrap the dough around the toppings.
Pinch to make sure each ball is sealed shut and then place
them seam side down in a lightly sprayed pie pan.
Brush the tops of the dough balls with olive oil or
melted butter and then sprinkle with the garlic
and Italian seasoning and top with Parmesan cheese.

Cook them in the oven for about 15-20 minutes or
until golden brown on top

Serve warm with warmed marinara sauce on the side for dipping.

Banana nut muffins


3 large ripe bananas, mashed (about 1-1/4 cups)
1/3 cup melted butter
3/4 cup sugar
1 egg, beaten
1 teaspoon vanilla extract
1 teaspoon baking soda
1/8 teaspoon salt
1-1/2 cups flour
1/3 cup chopped walnuts or pecans

In a large bowl, combine the bananas and butter;
stir in the sugar, egg and vanilla extract.In a small
bowl, combine the baking soda, salt and flour.
Add the flour mixture to the banana mixture; blend well.
Fill greased muffin cups 3/4 full. Bake at 350 degrees.
for 18 to 22 minutes. Cool on a wire rack.
Makes 12 muffins or 24 mini muffins.

Apricot fruit leather

My in laws have a couple of apricot trees in their yard.
While visiting them we helped picked apricots
and I learned how to make apricot leather.
Apricot Leather is basically a large fruit roll up.


1 teaspoon lemon juice
2 cups pitted and diced fresh apricots
1/2 cup white sugar

Directions
Preheat the oven to 150 degrees or the lowest setting you have.
Cut the apricots in half and take out the pits.
Combine lemon juice, apricots and sugar in blender. Blend
until mixture smoothed. Cover a cookie sheet with a
layer of plastic wrap (helpful tip is to tape the sides).
Pour the pureed fruit onto the plastic and spread evenly
to within 1 inch of the edge. Bake for 4 to 6 hours in
the preheated oven, until the puree has dried and is no
longer sticky. Once dry, you can cut it into strips
and wrap in wax paper. Store in an airtight container.
