Apricot chicken w/ almonds

Great Chicken Recipe!
4 (6- oz) skinless boneless chicken breast halves
5/8 teaspoon salt
1/2 teaspoon black pepper
1/3 cup sliced almonds
1/2 cup apricot preserves
1 1/2 tablespoons soy sauce
1 tablespoon whole-grain mustard
1 tablespoon unsalted butter

Put oven rack in lower third of oven and preheat oven to 400°F. Lightly oil a 13- by 9-inch flameproof baking dish (not glass).

Pat chicken dry and sprinkle all over with 1/2 teaspoon salt and 1/4 teaspoon pepper total, then arrange at least 1/4 inch apart in baking dish. Bake 10 minutes.

While chicken bakes, toast almonds in a small baking pan in oven, stirring twice, until golden, 8 to 10 minutes.

Meanwhile, cook apricot preserves, soy sauce, mustard, butter, and remaining 1/8 teaspoon salt and 1/4 teaspoon pepper in a small saucepan over moderate heat, stirring, until preserves are melted. Pour sauce over chicken and continue to bake until chicken is just cooked through, about 10 minutes more.

Turn on broiler and broil chicken 4 to 5 inches from heat, basting once, until chicken is glazed and browned in spots, about 3 minutes. Serve sprinkled with almonds.

Serve w/ rice and veggies!

Key Lime Pie


3/4 cup key lime juice
2 cups cool whip
14 oz. condensed milk
Graham cracker crust

Mix cool whip and condensed milk
together. Add lime juice. Stir
Until thickened. Pour in pie crust.
Let sit over night.

Crock Pot Triple Chocolate Mess

I got this recipe from my friend, Natalie. Its deeeelicious!

1 package chocolate cake mix
1 pint sour cream
1 small package instant chocolate pudding
1 small bag chocolate chips
3/4 cup oil
4 eggs
1 cup water

Spray crockpot with nonstick spray. Mix all ingredients. Pour into crockpot. Cook on low for 2-3 hours. Serve in a bowl with ice cream.

Taco Soup


This is one of my favorites! So Easy and so yummy! We are having this for dinner tonight in fact.
1 lb. ground beef, browned
1 onion
1 can 28oz. crushed tomatoes
1 can 15 oz. corn undrained
1 can 15 oz. black beans undrained
1 can 15 oz. red kidney beans undrained
1 envelope of ranch seasoning
1 envelope of taco seasoning
Brown meat and onions together. Put everything in a crock pot and cook on low 4-6 hours.
Serve w/ tortilla chips, cheese and sour cream.

Orange Julius

1(6oz) can orange juice
1 c. milk
1 c. water
1/3 c. sugar
1 tsp. vanilla
1 tray ice cubes

Mix all ingredients together in blender and serve.

Frog Eye Salad

Ingredients:
1 cup sugar
2 tablespoon flour
1 3/4 cup pineapple juice
2 eggs beaten
1 teaspoon lemon juice
1 pkg. acini di pepe pasta
2 (11 ounce) cans mandarin oranges , drained
1 (20 ounce) can tidbit pineapple, drained
1 (20 ounce) can crushed pineapple, drained
1 carton cool whip
1 cup miniature marshmallows

Directions:
In small saucepan mix sugar, flour, and salt, stir in
pineapple juice and egg. Cook over moderate heat,
stirring constantly until thickened. Add lemon juice.
Set aside and cool. Cook Acini Di Pepe according to
package directions. Combine cooked mixture with
Acini Di Pepe. Cover; place in refrigerator until chilled.
Add remaining ingredients and chill for 1 hour before
serving.

Lemon Broccoli Chicken


I found this recipe on a Cream of Broccoli
Campbell's soup can.
4 skinless, boneless chicken breasts
1 lemon
1 tbsp. vegetable oil
1 can Cream of Broccoli Soup
1/4 cup milk
black pepper

Cut 4 thin slices of lemon. Squeeze 2 tsp. juice
from remaining lemon. Heat oil in a skillet. Cook chicken
until no longer pink. Mix soup, milk, lemon juice and black
pepper. Add sauce to chicken and top with lemon slices.
Heat to a boil. Cover and cook over low heat about 5 minutes
or until done. Serve with rice.

Lofthouse Cookies



Okay, so I just ate 3 of these cookies, they are my favorite! I got this recipe a long time ago and I found it in my E-mail. I have never tried to make them. I thought that I would throw it out there and see if anyone else wants to try to make them. You will have to let me know if they taste as good as the real thing!

Lofthouse Cookies:

2 eggs

2 C. sugar

2 C. cream

2/3 tsp.

Salt 2 tsp.

baking soda 2 tsp.

baking powder

2 C. shortening (Lard)

Vanilla to taste Enough flour to form a soft ball (She told me that the key to making soft, fluffy cookies is to add a lot of flour. But she didn't tell me how much. ) I assume that you just mix all of the ingredients together because there are no special directions listed. Bake at 350º (again no specified time) and the cookies need to stay white.


Icing:

1 pkg. powdered sugar

1 egg

1 can condensed milk (for spreading)

1 tsp shortening

1 tsp butter

Puddle Of-Fudge Cake

1 egg
1 box fudge brownie mix
3 tablespoons vegetable oil
3 tablespoons water
1 box(4 serving size)
chocolate pudding not instant
2 cups very hot water

Preheat oven to 400 degrees. Mix brownie
mix with oil, 3 tablespoons water, and egg.
Put mixture in a 8x8 baking dish. Mix together
pudding mix and hot water. Pour pudding
mixture over brownie batter. Bake 35 to 40
minutes or until pudding bubbles around
edge of dish. Serve warm with vanilla ice cream.

Cheesy pepperoni pulls

This is a variation of a fun recipe I found on the Kraft Foods website. I changed a couple of the amounts to my liking(more cheese, less onion:). Find the original recipe here.

3-4 oz. pepperoni slices
1 green pepper, chopped
1/2 medium onion, chopped
1 cup grape or cherry tomatoes, sliced in half
1/4 cup Zesty Italian Dressing
2 cups shredded mozzarella cheese
1 pkg. (13.4 oz.) refrigerated pizza dough

PREHEAT oven to 400ºF. Combine pepperoni, peppers, onions, tomatoes and dressing in 13x9-inch baking dish sprayed with cooking spray. Sprinkle with cheese.

UNROLL pizza dough; cut into 2-inch pieces with sharp knife or kitchen shears. Place evenly over cheese.

BAKE 30 min.; cool 10 min. Invert onto platter(let your kids watch you do this part! mine thought it was so cool); carefully remove dish.

Serve it with pizza sauce, ranch or any other sauce you love! My kids thought this was fun and yummy. They loved watching me flip it over and they loved being able to "pull" their own piece off. You can also change it up to whatever pizza toppings your family loves.

Rigatoni


1 lb. ground beef
1 pkg. Original Spaghetti sauce
1 pkg. Thick and Zesty spaghetti sauce
1 8oz pkg. cream cheese
mozzarella cheese shredded
2 small cans of tomato sauce
1 pkg. rigatoni noodles

Prepare spaghetti sauce following directions on package.
Cut cream cheese into chunks and cook into sauce. Brown
ground beef. Add sauce to cooked beef. Cook noodles
according to package. Put cooked noodles in a 9x13 baking
dish. Pour sauce over the noodles. Sprinkle mozzarella cheese
on top. Bake at 350 until bubbly and cheese melts.

Layered Enchilada Bake


Makes:8 servings

1 lb. lean ground beef
1 large onion, chopped
2 cups Chunky Salsa
1 can (15 oz.) black beans, drained, rinsed
1/4 cup Zesty Italian Dressing
2 Tbsp. Taco Seasoning Mix
6 flour tortillas (8 inch)
1 cup Sour Cream
1 pkg. (8 oz.) Mexican Style Shredded Four Cheese

PREHEAT oven to 400ºF. Brown meat with onions in large skillet on medium-high heat; drain. Add salsa, beans, dressing and seasoning mix; mix well.

ARRANGE 3 of the tortillas in single layer on bottom of 13x9-inch baking dish; cover with layers of half each of the meat mixture, sour cream and cheese. Repeat all layers. Cover with foil.

BAKE, covered, 30 min. Remove foil. Bake an additional 10 min. or until casserole is heated through and cheese is melted. Let stand 5 min. before cutting to serve.

Chocolate Heart Pancakes


1 1/4 c. flour
3 Tbsp. cocoa powder
1 Tbsp. baking powder
2 Tbsp. sugar
1 egg
1 tsp. vanilla
1 c. milk
2 Tbsp. butter, melted
1/2 c. mini chocolate chips

Whisk all ingredients together and cook in a hot skillet.
You may need to add extra flour, depending on how fluffy you like your pancakes.
Cut into heart shape and serve with melted raspberry preserves, and whipped cream.

Baked Ziti

1 pound lean ground beef (ground chuck or ground round)
1/2 cup chopped onion
1 green bell pepper, chopped, about 1/2 cup
1 can (14.5 ounces) diced tomatoes, undrained
1 can (8 ounces) tomato sauce
1/2 teaspoon dried leaf basil, crumbled
1/2 teaspoon dried leaf oregano, crumbled (I substituted the basil and oregano for 1 tsp. Italian seasoning)
1/2 teaspoon garlic powder or small clove garlic, minced
1 1/2 teaspoons salt
1/4 teaspoon pepper
8 ounces ziti or elbow macaroni, cooked and drained
2 cups (8 ounces) shredded mozzarella cheese, divided

Sauté ground beef, onion, and green bell pepper in a large skillet until onion is tender and beef is lightly browned. Drain off excess fat; add tomatoes, tomato sauce, basil, oregano, garlic powder, salt, and pepper. Stir well; stir in ziti or elbow macaroni and 1 cup of the cheese; transfer to a 2 1/2-quart casserole. Top with the remaining cup of cheese. Bake at 350° for 25 to 30 minutes, or until hot and bubbly. Serves 6.

Yummy Chocolate Dessert

1 pkg. graham crackers
1 cube butter
8 oz cream cheese
2 8 oz Cool whips
1 c. powedered sugar
2 small pkgs. instant chocolate pudding
3 1/2 c. milk
Shredded chocolate bar

Prepare crust by mixing melted butter and smashed up package of
graham crackers. Put in a 9/13 inch glass pan.

Cream together 8 oz. cream cheese and 1 8 oz cool whip. Add
powdered sugar, chocolate pudding, and milk and mix well.
Pour on top off graham cracker crust. Spread the other 8 oz
Cool Whip on top of chocolate pudding mixture and shred
chocolate bar on top of Cool Whip.

Crunchy Granola

5 cups old fashioned oats
1 c. flaked coconut
1 c. sliced almonds
1/2 c. wheat germ
1/2 c. honey
1 tsp. vanilla
1 tsp. cinnamon
1/3 c. vegetable oil
1 c. raisins

*Preheat oven to 350 degrees. Spread oats on a ungreased
9x13 pan and cook for about 10 minutes.
*Combine oats, coconut, almonds, wheat germ, and
cinnamon in a large bowl. Stir in honey, oil,and vanilla.
*Spoon into same 9x13 pan and bake for 30 to 35 minutes at 350.
Stir often to brown evenly. Remove from oven and mix in
raisins and let cool(stir occasionly while cooling to prevent
sticking together. Store in air-tight container. Very good
as a breakfast cereal or as a topping for yogurt.

1 c. strawberry yogurt
1 ripe bananna
1 c. of milk
2-3 ice cubes
4 diced strawberries(optional)

Add all ingredients to blender.
Blend until smooth. Makes

Hot Sausage Dip

1- Brown 1 lb. Hot Jimmy Dean Sausage
2- Simmer until tender with sausage and
grease the following diced items.
* 1 large tomato
* 1 large bell pepper
* 1 large onion
* 1 7oz. can diced green chillies
* 1 7oz. can jalapenos(sliced)
3- Combine in crockpot with 2 12 oz. cream cheese,
1 16 oz. sour cream. As sauce thickins add another
16 oz. sour cream. Serve warm with tortilla chips.

Chocolate-Covered OREO Cookie Cake

Ingredients


2-layer size devil's food chocolate cake mix
4 squares BAKER'S Semi-Sweet Baking Chocolate
1/4 cup (1/2 stick) butter, cut up
1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
1/2 cup sugar
2 cups thawed COOL WHIP Whipped Topping
12 OREO Chocolate Sandwich Cookies, coarsely crushed


PREHEAT oven to 350°F. Prepare and bake cake mix as directed on package in two 9-inch round baking pans. Cool 5 min.; remove from pans. Cool completely on wire racks.

MICROWAVE chocolate and butter in small microwaveable bowl on HIGH 2 min. or until butter is melted. Stir until chocolate is completely melted. Cool 5 min.

BEAT cream cheese and sugar in large bowl with electric mixer on medium speed until well blended. Gently stir in whipped topping and crushed cookies. Place one cake layer, top-side down, on serving plate. Spread top of layer evenly with cream cheese mixture. Cover with remaining cake layer, top-side up. Spoon chocolate glaze over top of cake. Let stand until set. Store in refrigerator

Chicken Puffs


Ingredients:

Boneless Chicken Breast
Cream Cheese
Frozen Broccoli pieces
Montreal Chicken Seasoning by McCormick (or your favorite seasoning)

This recipe is easy and you can make as many as you would like.

Take each chicken breast pound it flat
Sprinkle on desired amount of seasoning
Add 1 tablespoon of cream cheese to the center of the breast
Next place as much broccoli as you desire on top of the breast
Take both ends and meet in the middle, secure with toothpicks

Place in a butter dish and bake for about 1 hour on 375 degrees.
