Pumpkin Pie Smoothie

I know what your are thinking another pumpkin recipe.
But I just love this time of the year and I love trying
out new pumpkin recipes.  I promise I will try to post
some other recipes without pumpkin in them soon.  :)

Recipe from Red Head Recipes

1/2 banana (peeled, frozen, diced)
1/3 cup pumpkin puree (Libby’s)
1/3 cup vanilla yogurt
3/4-1cup milk
Few shakes of pumpkin spice (Cinnamon, ginger, nutmeg, and allspice)
Few shakes of cinnamon (optional)
Pinch of cloves
1tsp vanilla
4-5 ice cubes

Blend all ingredients in blender until smooth and sprinkle with
a little more cinnamon.

Baked pumpkin doughnut holes

Recipe from The Craving Chronicles

For Donuts1 3/4 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoons cinnamon
1/2 teaspoons nutmeg
1/2 teaspoon allspice
1/8 teaspoons ground cloves
1/3 cup vegetable oil
1/2 cup brown sugar
1 egg
1 teaspoon vanilla extract
3/4 cup canned plain pumpkin (not pumpkin pie filling)
1/2 cup low-fat milk

For Coating1/2 stick of unsalted butter, melted
2/3 cup granulated sugar
2 tablespoons cinnamon

Preheat oven 350°F. Spray each cup in a 24-cup mini muffin tin with baking
spray.In a medium bowl, whisk together flour, baking powder, salt and spices
(through cloves). In a separate, large bowl whisk together oil, brown sugar,
egg, vanilla, pumpkin and milk until smooth. Add dry ingredients to wet
 ingredients and mix until just combined –do not over mix!
Divide batter evenly among muffin cups. (Using a 2-tablespoon scoop will
ensure uniform size.) Bake at 350°F for 10-12 minutes or until a toothpick
comes out clean. While the muffins bake, melt butter in one bowl and combine
granulated sugar and cinnamon in another bowl. Remove muffins from oven
and cool for 2 minutes, or until just cool enough to handle. Dip each muffin
in melted butter, then roll in cinnamon sugar to coat.

Healthy Halloween Treat

A great way to sneak a healthy snack into your Halloween festivities.  Just take a sharpie to an orange,  clementine, tangerine, or mandarin and create your Jack o lantern face.  I know my boys would love finding one of these in their lunch box's.  :)

Pumpkin Pie oatmeal

1 c. quick oats
1/2 c. milk
2/3 c. water
pinch of salt
2 to 3 tablespoons maple syrup
1/4 tsp. pumpkin pie spice
1/2 c. canned pumpkin

Add all ingredients to a small pan.  Heat on
high for 1 to 2 minutes or until oats start to boil.
Add any additional ingredients to adjust sweetness
(maple syrup or a little sugar).  Top with a little
whip cream and dash of cinnamon.

Chocolate chip pumpkin bread

1 1/2 c. sugar
1 c. pumpkin
1/2 c. applesauce
2/3 c. water
2 eggs
1 1/2 c. flour
1/2 tablespoon cinnamon
1/2 tablespoon nutmeg
2 teaspoon baking soda
dash of salt
1/2 c. chocolate chips

Preheat oven to 350 degrees. Grease and flour loaf pan.               
In a large bowl, combine sugar, pumpkin, applesauce, water, and eggs.
Beat until smooth. Blend in flour, cinnamon, nutmeg, baking soda, and
salt. Fold in chocolate chips. Fill loaf pan.               
Bake for 45 min. to 1 hour, or until an inserted knife comes out clean.
Cool on wire racks before removing from pan.

How clever and easy is this!  Just add two large marshmallows with junior
mints in the middle of the marshmallows to your favorite cup of hot chocolate. 
My boys will get a kick out of this!

Monster Munch


Recipe from Our Best Bites

1 package Almond Bark (1 lb)
12 C popped popcorn (about 1/2 C kernels)
1 C candy corn
1 C dry roasted, salted peanuts
1/2 C Reece's Pieces

Pop popcorn and place in a large bowl. The largest you have.
It will make mixing easier! Pour peanuts, candy corn, and
Reece's pieces on top. Take a large knife and break up almond
bark. Melt according to package directions. Once melted pour
over popcorn mixture. Stir until everything is well coated and
then spread out onto waxed paper. Let sit until completely
dry and then break up into clumps. This is super yummy and
very addicting. You can't just eat one little bite. :)

Pumpkin Pie milkshake

1/3 C pumpkin, canned
1/4 - 1/2 C milk
1/4 t vanilla
1/2 t cinnamon
1/16 t cloves (just use a 1/8 t measure and fill it half way, or do a pinch)
1/16 t nutmeg
2 T brown sugar
2 C vanilla ice cream
1-2 graham crackers

Pop everything but graham crackers in a blender. Start
with 1/4 C milk and then slowly add more if needed to
make the blender process it all. I used somewhere
between 1/4-1/2 C. Sprinkle with crushed graham
cracker crumbs before serving.

Pumpkin Spice Magic Bars


Recipe from Picky Plate. She made little muffins, but I liked
making them in a 9 x 13 inch pan like on
Tried and True recipe
blog.

1/2 cup melted butter
1 1/2 cup graham cracker crumbs(about 9 whole graham crackers crushed)
2 T. brown sugar
4 oz softened cream cheese
1 cup pumpkin
1 egg
6 T. sugar
1/2 tsp vanilla
1/2 tsp cinnamon
1 cup milk chocolate chips
1 cup chopped pecans (optional)
1 cup shredded coconut
1 (14 oz) can sweetened condensed milk
Melted caramel and chocolate for drizzling on top

Preheat oven to 350 degrees. Combine the butter, graham crackers,
and brown sugar in a bowl and mix well. Press into the bottom of a
9x13 inch pan. Bake for 8 minutes then remove from the oven. In
a bowl beat the cream cheese, pumpkin, egg, sugar, vanilla, and
cinnamon until smooth. Pour evenly over the crust in the pan.
Next dump the chocolate chips over pumpkin layer then the
pecans then the coconut and then pour the sweetened
condensed milk all over the top. Bake for 25-30 minutes
or until golden brown on top. Remove and let cool. Drizzle
with Melted chocolate and caramel. Cut and enjoy. Store
leftovers in the fridge.
I made these treats to give to friends. I just added a tag
that said "Something to Sink you teeth into" and also
tied some vampire teeth to it.

Snack-o’-Lantern Fruit Cups


Slice top off the navel orange. Run a knife around its interior to hollow it out. Scoop out the orange segments and reserve for filling. Carve pumpkin face on one side of the orange. Repeat for other oranges. Use a paper towel to gently soak up any remaining juice inside the oranges. Dice up desired fruit, including the reserved orange segments and fill each cup. Set the lid back on top and serve.

Ghoul Aid

1 package unsweetened Grape Kool-Aid
1 package unsweetened Orange Kool-Aid
2 cups sugar
3 quarts cold water
1 quart Ginger Ale

Mix all of the ingredients together in large punch bowl.
For some extra fun, try freezing gummy worms and extra
ginger ale in ice cube trays and serve with the Ghoul Aid.

Halloween Chex Mix

8 oz white chocolate baking bars, coarsely chopped
4 cups Corn Chex or Rice Chex cereal
2 cups bite-size pretzel twists
1/2 cup raisins
1 cup candy corn
1/4 cup Halloween M&M's
In large microwavable bowl, microwave chopped baking bars
uncovered on High 1 minute 30 seconds to 2 minutes 30
seconds, stirring every 30 seconds, until melted and smooth.
Gently stir in cereal, pretzels and raisins until evenly coated.
Stir in candy corn and M&M's. Spread on waxed paper or foil
until cool and chocolate is set, about 30 minutes.
Break into chunks. Store loosely covered.

Goblin bars

1 package brownie mix
8 pieces DOVE Brand Miniatures Milk or Dark Chocolate
6 pieces SNICKERS Brand FUN SIZE Bars, chopped
½ cup M&M’S Brand Dark Chocolate Candies for Halloween

Prepare brownie mix according to box instructions for
an 8x8inch pan. Bake and let cool slightly. Place the
DOVE BrandMiniatures in a mixing bowl and place
the mixing bowl over a pot of simmering water. Stir
the mixture as it melts. When mixture is shiny and
smooth, turn off the heat. Pour halfof the melted
DOVE Brand Miniatures over the top of the brownies
and set aside the remaining half. Sprinkle SNICKERS
FUN SIZE Bars and M&M’S over the brownies. Drizzle
remaining DOVE Brand Miniatures on top.

Spider Web Cupcakes

My cute friend Holly showed me how to make
these cute spider web cupcakes last year.

Prepare your favorite cake mix and follow
the instruction on making 24 cupcakes.

Bake cupcakes and cool. Use white frosting.
You can also tint the frosting orange. Squeeze circles of
decorating gel (I like to use Betty Crocker's black
decorating gel) on each cupcake; using a
toothpick or a knife, pull outward to make a web.


Place a plastic spider ring on
each web.
