Slow Cooker Cream Cheese Chili


1 can black beans, drained & rinsed
1 can corn, undrained
1 can Rotel (tomatoes & gr. chiles), undrained
1 pkg. ranch dressing mix (I only used 1/2 package)
1 tsp. cumin
1 tbsp. chili powder
1 tsp. onion powder
1 (8 oz.) pkg. cream cheese
2 chicken breast halves or 5 tenders (I used 1 large Costco breast), frozen


Place chicken in bottom of slow cooker. Combine beans, corn, Rotel, ranch seasoning, cumin, chili powder and onion powder and pour over chicken. Place stick of cream cheese on top. Cover and cook on low for 6-8 hours. Stir cream cheese into chili. Use 2 forks and shred the chicken. Stir together and serve. Yield: 3-4 adult servings.


Jenn's Notes: This was delicious, but next time I will add slightly less seasonings, because it had just a little too much flavor (yes that is possible) and I even used 1/2 as much ranch seasoning! I added some water at the end to reach my desired consistency.

Crock Pot Chicken Taco Chili


1 16-oz can black beans
1 16-oz can kidney beans
1 8-oz can tomato sauce
10 oz package frozen corn kernels
2 14.5 oz cans diced tomatoes w/chilies
1 packet taco seasoning
3 boneless skinless chicken breasts  
chili peppers, chopped (optional)


Combine beans, corn, tomato sauce, tomatoes, and
taco seasoning in a slow cooker. Place chicken on top
and cover.  Cook on low for 10 hours or on high for 6 hours.
Half hour before serving,  remove chicken and shred.
Return chicken  to slow cooker and stir in.  You can
also try it with sour cream and cheese.

Creamy Chicken Tacos

Recipe from Jamie cooks it up

5 frozen chicken breasts
1 1/2 C salsa
2 cans cream of chicken soup
2 1/2 T taco seasoning
1 T maple syrup
1 t lime juice (you can use bottled)
1 T butter
1/2 C sour cream

Place the frozen chicken breasts inside crock pot.
In a small bowl stir together all other ingredients
but the butter and sour cream. Pour sauce over the
top of the chicken. Cover and cook on high for 4 hours, or
on low for 7-8 hours. Take chicken out of the crock pot and shred
it up with a fork and throw it back in. Add the butter and
sour cream, stir it all around until incorporated.
Cook for 1 more hour. Serve over Tortilla chips or Tortillas.

Top with tomatoes, onions, cheddar cheese, and lettuce.

Chicken Santa Fe


One 15 ounce can black beans, rinsed and drained
One small bag frozen sweet corn
1 cup bottled chunky salsa
4 skinless chicken breasts
1 8 ounce package cream cheese, cut into chunks
1 cup shredded cheddar

In a crock pot mix beans, corn and 1/2 cup salsa. Top with chicken
and pour remaining salsa over the chicken. Cover and cook on
HIGH for 3 hours, or until chicken is cooked throughout.
Remove chicken to a cutting board and cut into bite-sized pieces.
Return chicken to crock pot along with cream cheese. Stir and let
cream cheese melt into the mixture to create a creamy sauce.
When ready to serve top with cheese. You can serve the
chicken & sauce over rice or make tacos with it.

Bacon-Wrapped Garlic Chicken

4 bacon slices
4 boneless skinless chicken breasts
1 10oz can roasted garlic cream of mushroom soup
1/2 c. sour cream
1/4 c. flour

Wrap one slice bacon around each chicken breast. Place in slow cooker. Combine soup, sour cream, flour and mix together. Pour over chicken. Cook on low 6-8 hours(or high 3-4.) Serve over potatoes or rice for an easy fabulous meal!

Chicken Burritos


4-6 boneless chicken breasts
1/2 c. chopped onion
1/2 green pepper chopped
1 can mexican style stewed tomatoes
1 small can tomato sauce
1 small can chopped green chilis
1 pkg taco seasoning


Place everything in crockpot and stir. Cook on low 6-7 hours or 4-5 hours on high. One hour
before serving, shred chicken with fork. Serve in tortilla and top with sour cream, cheese and whatever else you like!

Creamy Herbed Chicken Stew

Add the following ingredients to your large crockpot in this order:
4 c. chopped carrots
1/2 c. chopped onion
2 stalks of celery, diced
4 Yukon gold potatoes, cut into 1 inch pieces
2 lbs. boneless, skinless chicken
Sprinkle with salt, pepper, and 1 t. thyme
Top with 3 c. chicken broth

Cover and cook on low 7-8 hours or high 4-5 hours. In the last 10 minutes of cooking, add 2 c. snap pea pods and 1 c. cream.

Italian Beef Sandwiches

2 1/2 pounds beef chuck roast
2 (1 ounce) packages dry Italian salad dressing mix
1 cup water
8 oz. pepperoncini peppers (It comes in a 16 oz. jar and I use half. You can use more or less depending on how spicy you want it. 8 oz. is pretty spicy even!)
Hamburger buns or kaiser/deli rolls

Place the roast into a slow cooker and add Italian dressing mix. Pour in the water. Cover, and cook on High for 6 hours. During the last hour, shred the meat with two forks and add the peppers and as much of the juice as you like for additional flavor. If it does not shred easily, cook longer. Reserve liquid to dip sandwich in for extra flavor. Serve on buns and enjoy!

Slow Cooker Swiss Steak









1/4 cup KRAFT Zesty Italian Dressing
1 boneless chuck blade or shoulder steak (1 lb.), cut into 4 pieces
1/4 cup flour
1/4 cup tomato paste
1 can (14-1/2 oz.) diced tomatoes, undrained
1/2 cup beef broth
1 cup chopped green peppers (about 1 medium)
1/2 cup shredded Swiss Cheese
Heat dressing in large nonstick skillet on medium-high heat.
Meanwhile, coat steaks evenly with flour; gently shake off
excess flour. Add to skillet; cook 2 to 3 min. on each side or
until each steak is browned on both sides. Remove from heat;
cover to keep warm. Combine tomato paste, tomatoes and
broth in slow cooker. Add steaks and peppers; cover with lid.
Cook on high 3 to 4 hours. Sprinkle with cheese just before
serving.

Barbecue Beef Sandwiches

I got this recipe from my friend Natalie. Its really yummy!

3 lb. roast
1 chopped onion
3 cups chopped celery
1 cup ketchup
1 cup good BBQ sauce
1 cup water
2 tbsp. white vinegar
2 tbsp. Worcestershire sauce
2 tsp. garlic
1 tsp. chili powder
1 tsp. salt
½ tsp. pepper

Cook in crockpot on high(I used the low setting on my crockpot because my High setting is too powerful) for 6-7 hours. Shred the beef and mix back in with sauce. Serve on buns.

Pork Chops and Gravy

4 pork chops
Salt to taste
Pepper to taste
1 tbsp oil
1( 10¾ oz.) can cream of mushroom soup
1/2 large onion, sliced
6 oz.(1/2 can) evaporated milk
1/2 cup sour cream

Season pork chops with salt and pepper. Brown in oil, drain,and transfer to slow cooker. In a separate bowl, whisk together the mushroom soup, onion,and evaporated milk until smooth. Pour over chops. Cook on high for 3-4 hours, or low for 6-8 hours. (My Rival slow cooker cooked the meat in 4 hours on low. It depends on the slow cooker. The high setting on mine always overcooks everything.)

Stir sour cream into mixture during the last 30 minutes of cooking.

I just tried this recipe the other day and it was great(and easy!) Serve it with mashed potatoes and use the gravy for you potatoes too! Yum!

Crock pot cordon Blue

4-5 chicken breasts
4-5 slices of Swiss cheese
4-5 slices of deli ham
1 can cream of chicken
1/2 cup milk
1/2 cup Italian flavored bread crumbs

Place slices of cheese and ham on each chicken breast. Roll
up and secure with toothpicks. Place chicken in the bottom of
crock pot. Mix soup and milk. Pour over chicken breasts.
Sprinkle with bread crumbs. Cook on low for 5-6 hours.

Crock Pot Triple Chocolate Mess

I got this recipe from my friend, Natalie. Its deeeelicious!

1 package chocolate cake mix
1 pint sour cream
1 small package instant chocolate pudding
1 small bag chocolate chips
3/4 cup oil
4 eggs
1 cup water

Spray crockpot with nonstick spray. Mix all ingredients. Pour into crockpot. Cook on low for 2-3 hours. Serve in a bowl with ice cream.

Pizza Fondue

This yummy and simple recipe is from a friend of a friend. Its a fun family friendly meal or appetizer(kids love to dip!). I make it a meal by serving it with salad and breadsticks.

1 lb ground beef
2 small cans pizza sauce
8 oz grated cheddar cheese
8 oz grated mozzarella cheese
1 tsp oregano
1 tbsp cornstarch
Tortilla chips


1. Brown beef, crumble fine, and drain .
2. Combine all ingredients except tortilla chips in slow cooker.
3. Cover. Heat on low for 2-3 hours.
4. Serve with tortilla chips.

Hot Chili

This is an awesome(and hot) chili recipe I got from a friend of a friend. I love a warm bowl of good chili this time of year. If you don't like your chili very hot, put in less(or omit) cayenne pepper.

1 ½ lbs. or 2 lbs. Ground Beef (cooked)
10 oz. can French onion soup
1 Tbsp. Chili powder
2 tsp. ground cumin
½ tsp. Black Pepper
few drop Tabasco
¼ tsp. Cayenne pepper
15 oz. can diced tomatoes
1 green pepper (diced)
15 oz. can Red kidney beans
6 oz. tomato paste
8 oz. tomato sauce


Combine all ingredients in slow cooker. Cover. Cook on Low 8-10
hours or high 4-5.

Slow-Cooker Chicken Tortilla Soup

I stole this off my friend, Kristi's, blog. I made it for dinner the other night and it was quite tasty!

1 lb cooked, shredded Chicken( I stuck 3 uncooked chicken breasts in the crockpot with everything and then shredded it with a fork when it was done)
1 can Rotel
1 can petite diced Tomatoes
1 can Black or Pinto beans
1 medium Onion, chopped
2 cloves Garlic, minced
2 cans Chicken Broth
1 (10 oz) pkg frozen Corn
2 c. water
1 Tbsp. chopped Cilantro
A healthy dash of lime juice
Taco Seasoning to taste
Salt & Pepper to taste
Toppings:
Shredded cheese
Sour Cream
Tortilla Chips
Avocado

Place Chicken, Rotel, Tomatoes, Beans, Onion, Garlic, Corn, Cilantro into a slow-cooker. Then add Chicken Broth, Water and Lime Juice. Top it off with the seasonings. Cover and cook on Low setting for 6 to 8 hours, or on High setting for 3 to 4 hours. To serve, sprinkle soup with cheese, tortilla chips, sour cream and avocado.

Slow Cooker Bow Tie Pasta Casserole


1 lb. ground beef

1 clove garlic

1 medium onion, chopped

2 (8oz.) cans tomato sauce

1 (14 oz.) can stewed tomatoes

1 tsp. Italian Seasoning
1 tsp. Oregano powder

Salt and pepper to taste

1 pkg frozen chopped spinach, thawed(I use less-I'm not a huge spinach person)

1 (16 pz. ) pkg bow tie pasta, cooked according to package directions

1/2 cup shredded parmesan cheese

2 cups shredded mozzarella cheese


Brown beef with garlic and onion. Drain. Place in slow cooker. Add tomato sauce, stewed tomatoes, seasonings. Cover and cook on low 7-8 hours. Last half hour, turn on high, add cooked pasta, cheeses, and spinach. Serves 6 or more-it makes a lot!

Cream Cheese Chicken

3-4 boneless skinless chicken breasts
1/2 stick butter
1 pkg. Good Seasons Italian salad dressing mix

Add ingredients to crockpot and cook on low for 4 hours, then on high for 1 hour. Then add:

1 (8oz.) pkg. cream cheese
1 can cream of chicken soup

Cook on high for 30 minutes. Serve over rice.
