Easy Mandarin Orange Salad

You need...
- your favorite salad greens (I use a spinach & spring mix mix.)
- a can of mandarin oranges (You could use less, but why? They're so yummy!)
- candied almonds (heat a skillet...add slivered "raw" almonds + a bit of sugar & stir until toasted...it only takes a minute or two...cool on wax paper or foil)

You can also add...
- chopped green onion (I usually leave them out.)

Toss toss toss. The orange juice is the dressing, which is what I love most about it. Dressings are always too gloppy, too thick or too tart for me. The orange juice is a perfect dressing.

Snickers Salad

4 green apples, cut into bite size pieces
1 pkg. "Fun Size" Snickers, cut into bite
size pieces
6 oz. whipped cream
1 small box instant vanilla pudding mix

Just before you plan on serving this salad, mix the apples,
snickers, whipped cream, and vanilla pudding and ENJOY!!

Asian Chicken Salad

1 package (8 to 12 oz.) Chopped Romaine or any variety salad pkg.
1 can (15 oz.) Mandarin Oranges, drained
2 cooked boneless, skinless chicken breasts, sliced
1/2 cup snow peas or fresh pea pods, cut in half (optional)
1/3 cup crispy noodles (chow mein noodles)
1/3 cup sliced almonds, toasted
1/2 cup bottled Asian sesame dressing

Toss together salad, mandarin oranges, chicken slices,
snow peas, crispy noodles and almonds, in large serving
bowl. Pour dressing over salad; toss to evenly coat. Serve.

Southwestern Chicken salad

3 boneless skinless chicken breasts
1 tablespoon olive oil
1 tablespoon fajita seasoning mix or taco seasoning
4 1/2 cups lettuce, assorted, torn
2 tomatoes, cut in wedges
4 green onions, chopped
1 avocado, diced
1 cup corn, thawed
1 cup black beans
2/3 cup ranch salad dressing
4 teaspoons barbecue sauce
broken tortilla chips

Rub chicken with olive oil and taco seasoning. Grill chicken
until done. Set aside and keep warm. While the chicken is
grilling, prepare and combine the remaining salad ingredients,
except the dressing. Slice chicken and add to salad.
In a small bowl, combine the ranch dressing and barbecue
sauce; serve with salad.

Broccoli Cole Slaw

Salad:
2 bags (3-ounce) Ramen Noodle Soup in Oriental (other flavors will work, too)
3/4 stick butter
1/4 cup slivered almonds
2 bags (12-ounce) bags broccoli cole slaw
(in the bagged salad section of the grocery store)
1/4 cup sunflower seeds (optional)
Chopped green onions, for garnish

Dressing Mix:
3/4 cup canola oil
1/4 cup brown or white sugar
1/4 cup apple cider vinegar
1 ramen noodle seasoning packet

Put the ramen noodles in a bag and crush them with a rolling
pin while melting butter in a large skillet over low/medium heat.
Add the crushed noodles and slivered almonds to the skillet and
saute, stirring occasionally (keep temperature at low/medium
heat). Meanwhile, whisk together all the dressing ingredients
in a small bowl. Place the shredded broccoli into bowl and
toss with the noodles, almonds, and sunflower seeds. Pour
dressing over salad and toss to coat. Garnish with chopped
green onions.

Romaine Strawberry salad


Salad:
Romaine lettuce
iceberg lettuce
celery, chopped
sliced strawberries
candied slivered almonds

Dressing:
4 Tbsp. Sugar
4 Tbsp. Water
1 tsp. salt
1 tsp. Pepper
2 Tbsp. Vinegar

Mandarin Orange Salad


It has been a long time since I have posted any recipes on this blog so I have decided to unload my arsenal of salad recipes for the summer.
Lettuce- romaine & iceberg
Red Onion sliced
Gala Apple or Jicama cut into 1/4 inch pieces
Cream Cheese cut into small pieces
Mandarin Oranges
Slivered, sugar coated almonds
Dressing:
1/3 C. Orange Juice (I use the drained juice from the can of oranges)
2 tsp. sugar
1/2 C. oil
2 tsp. Red wine vinegar
1 pkg. Italian dressing mix
I don't have actual measurements for the salad, I just like to cut it up and put as much stuff in it until it is the way I like it. Put the first 4 ingredients in and when ready to serve add the oranges, almonds, and dressing and enjoy!
