Blueberry oatmeal muffins


2 cups flour
1 cup oats–quick or regular oats
2/3 cup sugar
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups honey greek yogurt (Chobani)
2 large eggs, lightly beaten
4 tablespoons unsalted butter, melted and slightly cooled
1 teaspoon vanilla extract
1 cup fresh blueberries

Heat oven to 350°. Coat muffin tin with cooking spray
or liners. Combine flour, sugar, oats, baking powder,
baking soda and salt in a bowl. Combine yogurt, eggs,
butter, and vanilla in a second bowl. Fold yogurt
mixture into dry mixture; stir to combine completely.
Gently fold in blueberries. Spoon into muffin tins.
Bake for 20-25 minutes.  My family likes the
mini muffins so I just bake them for half the time
12 -15 minutes.

Baked Oatmeal muffins

Recipe from Sugarfree Mom

  • 2 eggs
  • 2 cups applesauce, unsweetened
  • 5 cups, Old Fashioned rolled oats
  • 1 banana, mashed
  • 2 3/4 cups milk
  • 1/4 cup flaxseed meal
  • 1/2 cup honey
  • 1 tablespoon ground cinnamon
  • 3 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1 teaspoon salt
  • Optional toppings: raisins, walnuts, chocolate chips

  • Preheat oven to 350 degrees. Mix eggs, vanilla, applesauce,
    banana and honey together in a bowl. Add in oats, salt,
    baking powder, flax and cinnamon and mix well with wet
    ingredients. Finally pour in milk and combine.  The batter
    will look runny, but that is ok.  Spray a 12 count muffin tin
    with cooking spray or use cupcake liners. Pour mixture evenly
    into muffin tin cups. If using toppings add them onto the tops
    of muffins now.  Bake 30 minutes until a toothpick in center
    comes out clean. Cool and enjoy!

    Homemade Egg (Mc)Muffins


    These are so yummy and easy to make.  Recipe from Betty Crocker Wannabe

    One whole wheat English muffin, toasted
    One slice of cheese
    One egg
    Spray a coffee mug with cooking spray.  Crack the egg in the mug
    and scramble with a fork.  Cover with a wet paper towel and
    microwave for about 50 seconds.  Place cheese slice on one side
    of of English muffin, top with egg and other muffin half.

    Baked pumpkin doughnut holes

    Recipe from The Craving Chronicles

    For Donuts1 3/4 cups all-purpose flour
    2 teaspoons baking powder
    1/2 teaspoon salt
    1/2 teaspoons cinnamon
    1/2 teaspoons nutmeg
    1/2 teaspoon allspice
    1/8 teaspoons ground cloves
    1/3 cup vegetable oil
    1/2 cup brown sugar
    1 egg
    1 teaspoon vanilla extract
    3/4 cup canned plain pumpkin (not pumpkin pie filling)
    1/2 cup low-fat milk

    For Coating1/2 stick of unsalted butter, melted
    2/3 cup granulated sugar
    2 tablespoons cinnamon

    Preheat oven 350°F. Spray each cup in a 24-cup mini muffin tin with baking
    spray.In a medium bowl, whisk together flour, baking powder, salt and spices
    (through cloves). In a separate, large bowl whisk together oil, brown sugar,
    egg, vanilla, pumpkin and milk until smooth. Add dry ingredients to wet
     ingredients and mix until just combined –do not over mix!
    Divide batter evenly among muffin cups. (Using a 2-tablespoon scoop will
    ensure uniform size.) Bake at 350°F for 10-12 minutes or until a toothpick
    comes out clean. While the muffins bake, melt butter in one bowl and combine
    granulated sugar and cinnamon in another bowl. Remove muffins from oven
    and cool for 2 minutes, or until just cool enough to handle. Dip each muffin
    in melted butter, then roll in cinnamon sugar to coat.

    Pumpkin Pie oatmeal

    1 c. quick oats
    1/2 c. milk
    2/3 c. water
    pinch of salt
    2 to 3 tablespoons maple syrup
    1/4 tsp. pumpkin pie spice
    1/2 c. canned pumpkin

    Add all ingredients to a small pan.  Heat on
    high for 1 to 2 minutes or until oats start to boil.
    Add any additional ingredients to adjust sweetness
    (maple syrup or a little sugar).  Top with a little
    whip cream and dash of cinnamon.

    Stuffed French toast

    Recipe and picture from Oikos Yogurt
    Check out their site for other yummy recipes
    using Greek yogurt.

    2 1/2 cups Dannon Oikos Greek Vanilla Yogurt, divided
    4 large eggs
    1/2 tsp. ground cinnamon
    Zest of one orange optional
    12 thick slices country style or potato bread
    1/4 cup seedless berry jam optional

    In a bowl mix together 2 cups yogurt, eggs, cinnamon, and orange zest.
    Pour yogurt mixture into 9” x 12” baking dish.
    Place 4 slices of bread on clean work surface. Spread the
     2 Tbsp. yogurt and 1 Tbsp. berry jam over each of the bread
     slices, top each with another piece of bread, and add to yogurt
     mixture in the baking dish. Turn to coat both sides and cover with
    plastic wrap and allow casserole to soak, refrigerated, at least 15 minutes.
    In a non stick skillet heat a touch of oil. Griddle the yogurt soaked
     sandwiches for 4-5 minutes per side (or until golden brown and
    heated through. Sprinkle with powdered sugar and serve with syrup.

    French Toast Bites


    Recipe from Multiply Delicious

    3 Tablespoons Sugar
    2 teaspoons ground cinnamon
    2 large eggs
    1/2 cup buttermilk
    1/2 cup milk
    1 teaspoon vanilla extract
    Pinch of Salt
    1 loaf french bread, cut into 1-inch cubes
    2 Tablespoons unsalted butter

    In a large bowl, stir together the sugar and cinnamon.
    Set aside.

    In a large shallow bowl, whisk together the eggs,
    buttermilk, milk, vanilla, and salt until blended.
    Place the bread cubes in the egg mixture and using
    a large spoon, toss gently until the cubes are
    evenly coated and all the egg mixture has been absorbed.

    In a large frying pan over medium heat, melt 1 tablespoon
    of the butter. Add half the coated bread cubes and cook,
    turning often, until golden brown on all sides, about
    5 minutes. Transfer the cubes to the bowl holding the
    cinnamon sugar and toss to coat. Repeat with the
    remaining bread cubes and 1 tablespoon butter.

    Divide the french toast bites into individual
    servings and sprinkle with remaining cinnamon-sugar.
    Serve with maple syrup.

    4th of July pancakes



    When I saw this cute idea from The Idea Room
    I couldn't wait to make them for my family.
    I love making festive foods for different holidays.
    All you need to do is mix up your favorite pancake mix.
    Put half of the batter in another bowl and add
    some red food coloring. Cook and serve with blueberries.
    You could even serve with blueberry syrup.
    Easy and cute!!

    BREAKFAST OVERNIGHT

    1 lb. Jimmy dean hot sausage
    4 slices of bread, cut into 1/2" cubes
    6 to 8 eggs
    2 cups milk
    1 cup of shredded cheddar cheese
    1/2 tsp. salt
    1/2 tsp. dry mustard

    Crumble sausage in a medium skillet, cook over medium heat
    until brown, stirring occasionally. Spread bread cubes in a
    buttered 12 X 8 X 2" baking dish top with sausage and cheese.
    Combine eggs, milk, seasonings, beat well and pour over cheese,
    cover and refrigerate overnight, Bake at 350 degrees for
    30-40 minutes or until set.

    This is one of our favorite breakfast casseroles we have
    on Christmas morning.

    Pumpkin Pecan Spice Monkey Bread

    •cooking spray
    •1/3 cup granulated sugar
    •1 ½ tablespoons pumpkin pie spice
    •1 cup pecans, chopped
    •2 (11 ounce) packages of Pillsbury Thin Crust Pizza Dough
    •2 tablespoons unsalted butter, melted

    Preheat oven to 350 degrees. Spray a 10-11-inch spring form
    pan with cooking spray and set side. In a medium bowl, combine
    sugar, pumpkin pie spice, and pecans. Stir until everything is
    well combined. Lightly flour a surface and roll out both pieces
    of pizza dough, side by side. Brush each piece of dough with
    melted butter. Sprinkle sugar/pecan mixture over each of the
    pieces of dough, leaving a 1- inch border around the edge.
    Roll up both pieces of dough into a log, jell-roll style. Trim off
    the ends of each roll to make them neat, and then cut each roll
    into about 15 (1-inch pieces). Place each piece of dough side by
    side in concentric circles into the prepared pan.
    Bake for 30 - 35 minutes or until bread is lightly browned.
    Serve warm.

    Whole wheat pancakes

    1 cup whole uncooked wheat
    1 cup milk
    Combine and blend in blender for 4-5 minutes.

    Add:
    3 Tb. Honey
    2 eggs
    ¼ cup veg. oil
    2 tsp baking powder
    1 tsp. baking soda
    ¼ tsp salt
    1 tsp vanilla
    2tsp Cinnamon and (nutmeg to taste)

    Blend all together for a 1-2 minutes.
    Pour pancakes onto griddle and cook until sides start to bubble,
    flip and cook a minute more. Remove. Serve with your favorite
    syrup.

    Pumpkin bread french toast

    Use your favorite pumpkin bread and turn it into
    french toast.

    1 loaf pumpkin bread, at least a day old
    2 eggs, beaten
    1/2 cup milk
    1 tsp vanilla
    1/2 tsp cinnamon
    1/4 tsp allspice
    pinch of salt
    2 Tbsp butter

    Preheat the oven to 400˚F.
    In a large bowl, whisk together the eggs, milk, vanilla,
    cinnamon, allspice and salt; set aside.
    Slice the pumpkin loaf into 8 thick slices, not counting
    the end pieces (crust). Melt the butter in a large skillet.
    Meanwhile, dip each slice of bread in the egg batter. Let the
    bread soak up the custard. Transfer to the heated skillet
    and brown for 1 to 2 minutes on each side.
    Place the browned pieces of bread onto a baking sheet.
    Bake for 12 to 15 minutes. Serve with maple syrup or choice of toppings.

    Raisin Bread French Toast

    4 eggs
    1 Tablespoon milk
    1 tsp. vanilla
    1/2 tsp. cinnamon
    Powder sugar
    Raisin bread

    Heat griddle and lightly grease. In large bowl, whisk
    eggs, milk, vanilla, and cinnamon. Dip raisin bread
    slices in the batter and cook until golden brown on
    both sides. Sprinkle with powdered sugar. Serve
    with syrup or fruit.

    Banana nut muffins


    3 large ripe bananas, mashed (about 1-1/4 cups)
    1/3 cup melted butter
    3/4 cup sugar
    1 egg, beaten
    1 teaspoon vanilla extract
    1 teaspoon baking soda
    1/8 teaspoon salt
    1-1/2 cups flour
    1/3 cup chopped walnuts or pecans

    In a large bowl, combine the bananas and butter;
    stir in the sugar, egg and vanilla extract.In a small
    bowl, combine the baking soda, salt and flour.
    Add the flour mixture to the banana mixture; blend well.
    Fill greased muffin cups 3/4 full. Bake at 350 degrees.
    for 18 to 22 minutes. Cool on a wire rack.
    Makes 12 muffins or 24 mini muffins.

    Blueberry Crumb Cake


    Ingredients
    ½ stick Butter
    1 Tablespoon (additional) Butter
    ¾ cups Sugar
    1 Egg
    ½ teaspoons Vanilla Extract
    2 cups All-purpose Flour
    2-¼ teaspoons Baking Powder
    ½ teaspoons Salt
    ¾ cups Milk
    2 cups Fresh Blueberries

    TOPPING:
    ¾ stick Butter
    ½ cups Sugar
    ½ teaspoons Cinnamon
    ½ cups Flour
    ¼ teaspoons Salt

    Preheat oven to 350 degrees.
    Cream 1/2 stick plus 1 tablespoon butter with cinnamon and
    sugar. Add egg and mix until combined. Add vanilla and mix.
    Then add flour, baking powder, and salt to the mix.
    Add flour mixture and milk alternately until totally incorporated.
    Do not over beat. Stir in blueberries. Grease a 9 x 13 inch
    baking pan. Pour in batter.
    In a separate bowl, combine topping ingredients and
    cut together using two knives or a pastry cutter.
    Sprinkle over the top of the cake. Bake cake for 40 to 45 minutes,
    or until golden brown.

    Cinnamon Toast Muffins

    1 1/2 Cups whole wheat flour
    1 Cup Rolled Oats
    1/3 Cup Sugar
    1 Tablespoon baking powder

    In a separate bowl, combine following wet ingredients:
    1 cup milk
    1 egg
    1/4 cup canola oil
    1 tsp vanilla

    Mix all ingredients til moistened. Fill muffin cups 3/4 of
    the way full. Sprinkle a generous amount of cinnamon
    sugar on top of each muffin. Bake in 400 oven for 12 minutes
    or until cooked through.
