Pepperoni Roll Ups


We made these for dinner tonight(I doubled the recipe for my big family and served with a green salad). Not only are they super tasty, they are super easy! Your kids can help you roll them up and they are ready in less than 15 minutes! This is the perfect kid-friendly weeknight meal.

1 tube (8 ounces) refrigerated Pillsbury crescent rolls

32 slices pepperoni

4 pieces string cheese, cut in half

1/4 teaspoon italian seasoning

1 Tablespoon butter, melted

Marinara or Pizza sauce, for dipping


DIRECTIONS: Preheat oven to 375 degrees. Unroll crescent dough; seperate into 8 triangles. Place 4 pepperoni slices on the large end of each triangle. Place one half string cheese on the top of the pepperonis. Roll up towards point. Place roll ups at least 2 inches apart on a lightly greased cookie sheet.


Mix together italian seasoning and melted butter. Brush over the tops of the roll ups. Bake for 10-12 minutes or until golden brown.

Bloomin' Onion Bread


1 unsliced loaf sourdough bread
12-16 ounces Monterey Jack cheese, thinly sliced
1/2 cup butter, melted
1/2 cup finely diced green onion
2 teaspoons poppy seeds

Preheat oven to 350 degrees.
Cut the bread lengthwise and width wise without cutting
through the bottom crust. This can be a little tricky
but the bread is very forgiving. Place on a foil-lined baking
sheet. Insert cheese slices between cuts. Combine butter, onion,
and poppy seeds. Drizzle over bread. Wrap in foil; place on a
baking sheet. Bake at 350 degrees for 15 minutes.
Unwrap the bread and bake 10 more minutes, or until cheese is melted.

Cowboy Caviar


1 can black beans, drained
3 large tomatoes, chopped
3 large avocados, chopped
2 Tbs chopped green onions
1 package dry Italian dressing
2 Tbs olive oil
1/4 cup white vinegar
3 Tbs water

In a large bowl mix corn, peas, tomatoes, avocados and
onions. In another bowl mix the dry Italian dressing,
olive oil, vinegar and water. Pour the dressing over the
vegetable mixture and toss until evenly coated.
Serve with tortilla chips.

Tomato Bruschetta


French bread cut 1/2 inch thick
2 tomatoes, cut in small cubes
1 teaspoon dried basil
2 tablespoons grated Parmesan cheese
2 tablespoons olive oil
Garlic salt and pepper to taste

Slice bread and brush oil on one side. Broil briefly until it
starts to brown. Watch it carefully because it browns quickly.
In a medium bowl, mix tomatoes, basil, Parmesan, olive oil,
and little garlic salt and pepper to taste.
Spread a spoonful on toasted rounds and serve.

Guacamole

1 onion chopped fine
1/4 cup chopped fresh cilantro
2 small tomatoes chopped fine
4-5 avocados, mashed
juice of 1 lime

Combine all ingredients, season to taste with salt and pepper.

Marinated Chicken Wings

1 c. brown sugar
1 c. soy sauce
1 c. water
1 Tbsp. dry mustard
5 lbs. chicken wings

Directions: Mix ingredients pour over wings and marinade
over night. Bake at 325 degrees for 2 hours.

My dad always makes them on Christmas eve. These are one
of our favorite Christmas dishes!

Crostini

French Bread, thinly sliced

4 oz. goat cheese
¼ c. pesto

Mix together and spread on bread. Top with sliced Roma tomatoes and shredded parmesan cheese. Bake at 350° until edges are golden and parmesan starts to melt. (10 to 15 minutes) Delicious and very easy.

Ham and Cheese Sandwiches for a Crowd

For 100 sandwiches

  • 100 soft bakery rolls, sliced but not all the way through
    (you can use buttercrust, kaiser, Texas or hamburger)
  • 1-1/2 5-pound Krakus Polish Ham, sliced thin
    other hams work but are too salty, I think)
  • 4-1/2 lbs Swiss cheese, sliced thin

Spread

  • 2 lbs unsalted butter, softened (may need a little more)
  • 1 9-oz jar horseradish mustard (may not want to use that much)
  • 1 1-1/4 oz jar Poppy Seeds
  • 1 cup minced onion or onion flakes

Spread filling on both insides of rolls. Add slice of ham and slice of cheese (if really thinly sliced, then use 2 of each). Wrap sandwiches individually in aluminum foil. Freeze. When needed, thaw and bake at 350* for about 15 minutes. If cooking directly from freezer, you'll need to increase time to approx. 30 minutes. Depending upon what roll you use, and the temperature variation in your oven, you may have to cook longer to get it hot in the middle.

This is another one of Aunt Diana's stand-bys - she always had these in the frezeer. It helps to have help making them (take a couple hours on a Saturday), but then you've got them for the winter - or a really big party.

Apple Dip

8 oz. cream cheese, softened
3/4 cup brown sugar
1/4 cup white sugar
1 tsp. vanilla
1 tsp. cinnamon

Directions: Mix ingredients together and
serve with apples slices.
